Food Safety

Once you receive your food, please place it in the refrigerator or freezer immediately. As all of our products are pre cooked, partial or complete thawing will not impact product integrity, simply place in the freezer until the day before you are ready to prepare.

All of our products have a minimum frozen shelf life of 12 months. Each product has a "best by" date indicated on the bottom of the package.

Once the frozen products are defrosted, they must be kept in the refrigerator and consumed within 4 days.

The lobster salad should never be frozen, and should be consumed within 3 days of receipt.

All of our lobster products use only the claw and knuckle meat, which is the tenderest part of the lobster. We do not use tail meat, except in those products where the tail is sold in the shell, such as the Maine Shore Dinner, Maine Clambake, Lemon Butter Tails and others.

We take food safety very seriously. All of our seafood (but for the oysters and scallops) is pre cooked before we purchase it, so we handle very little raw product. We conduct an annual food safety audit, using outside vendors that we pay for, and routinely score well in the "Excellent" range for the quality of our procedures, record keeping and facility management.
