Lobster Quiche

  • 1 1/2 lb Maine lobster meat
  • 3 cup shredded swiss cheese
  • 1/3 cup minced scallions
  • 2 1/2 cup light cream
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika
  • 5 eggs

Place pastry in two pie plates or one 9 by 13 pan. Shape to pan. Line pastry with the lobster meat, shredded cheese and scallions Mix together and beat well the eggs, cream, sugar and paprika. Pour the egg,cream mixture over the lobster, cheese, scallions.

Place in pre-heated 350 degree oven. Bake approximately 45 minutes, longer for the larger pan, or until the quiche is set. Knife inserted in center should come out clean.

Cool for 5 minutes before serving.
