Our award-winning Wellington is sure to wow anyone lucky enough to taste it, and like its traditional beef counterpart, these flaky puff pastry pockets are bursting with flavor in every bite. Tender meaty chunks of fresh Maine lobster join forces with our smooth cream cheese Lobster Paté featuring subtle undertones of tarragon, chives, parsley and a hint of lemon juice to enhance the lobster's natural flavor. A generous drizzle of our thick 'n creamy lobster sauce gives this dish a decadent finishing touch.

Lobster Wellington: lobster, puff pastry (butter, unbleached flour, water, salt, lemon juice), cream cheese (pasteurized nonfat milk and milk fat, cheese cultures, whey protein concentrate, salt, xantham gum), egg white, heavy cream, sour cream (grade A cultured cream), onions, celery, butter (cream, salt), lemon juice, garlic, tarragon, parsley, chives, white pepper, lemon zest, salt. Contains: shellfish (lobster), milk, wheat, egg. Made in a facility that uses: soy, fish, tree nuts. May contain shell fragments.

Lobster Sauce: Cream, Milk, Modified Food Starch, Lobster base (cooked lobster, salt, maltodextrin, hydrolyzed corn protein, whey, lobster extract, butter oil, autolyzed yeast extract, tomato paste, onion powder, dehydrated potato flakes, paprika, natural butter flavor, spices, garlic powder, saffron), Water, Tomato paste, (tomato paste, spices natural flavors, citric acid), Sugar, Paprika, Black pepper. Contains: Milk, Shellfish (lobster). Made in a facility that also uses Egg, Fish, Tree nuts, Wheat, Soy.

Lobster Wellington: Thaw in refrigerator for 24 hours immediately before use. Remove Wellingtons from package and place on a baking sheet. Preheat oven to 400 degrees. Bake until internal temperature reaches 165* about 30 minutes. Serve immediately with lobster sauce. Do not microwave.

Lobster Sauce: Thaw in refrigerator for 24 hours immediately before use. Pour contents into a saucepan or double boiler. Heat on medium heat until very hot, but not boiling. May be microwaved. Spoon over Lobster Wellington.

No Instructions & Soggy Bottom

I think the review title says it all. While there were nice chunks of lobster inside the pastry, the bottom was soggy, there was no sign at all of the "duxelles" - was it even there? - and the puff pastry did not really puff. Oh, and I finally found some cooking instructions online so it wasn't the chef who was at fault here. WHO sends out a lovely and special product without providing cooking instructions??? C'mon Hancock. You have a nice product here but you need to take some steps to insure a successful outcome for those of us who take a chance on you.

Wellingtons are Wonderful!

I'm quite familiar with Beef Wellington, but Lobster Wellington, I was not so familiar. Let me be the first to tell you, they make a spectacular presentation for dinner! I chose to spread the sauce all on the plate and place the baked Wellington on top so my guest could enjoy the beautiful pastry lobster silhouette. Couldn't be easier! Just thaw, bake and serve! Note: Be certain to use a double boiler to heat the sauce as you don't want it to break. This is by far my favorite dinner from Hancock Gourmet Lobster. I served with fresh corn on the cob but kale or swiss chard would be really good with it too! Definitely planning to order this to serve for Thanksgiving later this year!
