Big flavor, Big fun, Little fuss!
First stop at your favorite market for ingredients but don't think about standard chips and dips. Think cold lobster meat on salad, sliced cheeses, deli meats, dried fruit and Whoopie Pies for dessert!
The classic lobster roll is made with fresh cooked chilled lobster meat cut into chunks. Mix with a little mayonnaise and a sprinkling of salt and pepper. The New England split top roll is, in our opinion - and most of Mainers, an absolute requirement. They are not gourmet, just perfect. Spread a bit of butter on each side of the roll and place on a griddle to brown lightly. Fill the rolls with lobster meat and place on a plate with potato chips and pickles. Your favorite locally brewed micro-brew beer tops the meal.
We are not opposed to adding certain things to your lobster roll such as celery, lemon zest, tarragon, chives or capers to give them a bit of a twist. We also like a classic coleslaw as a great side to the rolls. Dessert is a Whoopie Pie or a chocolate brownie.
We've often served an "appetizer" lobster roll. Stuff the lobster salad into savory mini puffs to make a delightful finger food.
