Our Principles

In addition to Cal's great recipes, there are four essential principles governing our business.

1. Quality. We use the best ingredients available and we always support Maine companies. We purchase our cream, butter and milk from local dairies. We buy Maine lobster from Maine lobstermen (incidentally, "women who lobster"-several of whom work for us- prefer to be called lobstermen). In Maine, most lobstermen sell their daily catch to a co-op. The co-op then sells to restaurants, dealers, processors and others. Processors sort, cook and "pick" the catch. Picking refers to the process of removing the lobster from the shell and sorting the lobster meat into various combinations, lobster tails, lobster claws, lobster knuckles and everything else. We buy our meat from three primary sources in Maine, all established family businesses and all actively supporting the preservation of the lobster supply. Cal insists on using only claw and knuckle meat, the most tender part of the lobster, for all of her recipes. Our favorite supplier is Sue Hawkes, a neighbor in Cundy's Harbor, whose family has been lobstering for generations. Sue fulfills our live lobster orders as well. The live lobsters that Sue sends to our customers come out of her husband's traps on the day they are sent to our customers. When we want lobster to eat at home, we buy from Sue, that's how good it is.

2. People. Cal, and her husband Jack, have spent over 60 years (combined, thank goodness) in taking care of customers. We appreciate how important each customer is and work hard to hire people who understand this as well. We currently have an outstanding permanent staff of 6 full time employees. Kevin, our Executive Chef, has worked in the restaurant industry for over 15 years, is in charge of production and assists Cal with product development. Kevin manages a staff of up to 25 full and part time production workers. Dan, our Shipping Manager, is an avid guitarist and classic car enthusiast. Amber, hails from a military family and has lived in many places, but loves Maine. She manages our online marketing and also is terrific helping our customers. Sue is our financial manager and also talks with customers on a regular basis. She hails from Phippsburg, but lived in Moosehead for a number of years. Kevin, Dan and Sue are lifetime Maine residents.

3. Service. The very best part of our business are the calls and emails from customers raving about the quality and service received from our little Company on the coast of Maine. We are innovative and proactive in finding new and better ways to share our great products with new customers each week, and that requires constant attention to the smallest details. We work hard to introduce the values and integrity of Maine business to "people from away",and it is really rewarding and fun!

4. Innovation. All of this, the quality, the people and the service, are to support our growing line of lobster and seafood specialties. We like to be innovative in everything we do from product development to hiring the best folks to work with us, to exceeding our customer's expectations on all levels.
